Homemade Cauliflower Alfredo Sauce Recipe

I am lucky to have a pretty good palate. I don’t like everything but I can try most things. My brother in law lives in a foreign country and some of the things he has tried are completely not going to happen for me. The squid he tried was still alive, I Can Not do that. I will try most things though. Unfortunately the other two thirds of my family do not share the same sense of adventure with food as I do. They don’t like to do things different. When I say ‘how about we try that like this’, I’m usually faced with a big fat NO from them. They are so picky, it has come to really hurt my heart! But what they don’t know can’t hurt them, right?

Homemade Cauliflower Alfredo Sauce Recipe

Take this Homemade Cauliflower Alfredo Sauce recipe I’m sharing with you today. I made it when no one else was home, let it warm in the crock pot, and guess what? No one complained, no one said it tasted funny, and everyone at their whole plate. What’s That? SUCCESS? Yep, I think so!

I try to find simple ways to add at least a little more nutrition into our meals. Alfredo sauce made with cauliflower instead of heavy cream and a whole tub of butter is a perfect example! It is more on the healthier side but didn’t compromise the flavor. Flavor is extremely important, especially with Alfredo sauce, don’t mess up the Alfredo sauce!

Don’t get nervous, either, it was beyond easy to make! {and hide the vitamins & minerals!}
So how did I do it? Let me tell you.

I started cutting up a head of cauliflower. I didn’t use to much precision with this. Size consistency does not matter here. I also chopped up some sweet onion and garlic.

Cauliflower Alfredo 2

I boiled the cauliflower while sauteing the onions and garlic. I boiled the cauliflower in Low Sodium Chicken Broth to add extra flavor, but water is sufficient also. When both were complete I put them in my food processor.

Blend until smooth.
Next mix in:
Salt & Pepper
Italian Seasoning
Parmesan Cheese

If it is not as creamy as you prefer, go ahead and add a little milk or heavy cream.

At this point you can serve or put back into sauce pan and simmer until you’re ready to eat.

This sauce is outstanding, to say the least. We ate it with cooked pasta, chicken, bacon, and a few other sauteed vegetables (Tomatoes & Asparagus).
