Italian Meatball Grilled Cheese Sandwich Recipe

Grilled cheese sandwiches were a childhood staple of mine. I think because they were easy for my mom to make and it was one of the few things both my sister and I liked. 6th grade camp is the first time I remember indulging in the grilled cheese & tomato soup combination, though. I never went back. I will never turn down a grilled cheese sandwich and a bowl of creamy tomato soup, in any form. I will even take a slice of bread topped with a slice of cheese and put in the microwave. That’s taking it a little too far, I know, but I’ve been there. My experimentation has not stopped there. One of my favorite creations is an Italian Meatball Grilled Cheese Sandwich Recipe.

My daughter has a love for grilled cheese, just like her mama. I love her for that, among other things. My husband, though, does not see a grilled cheese sandwich as a meal. It’s a snack food to him, or maybe lunch, but absolutely not dinner. How unfortunate is that? Well, that is until I came up with this delicious collaboration of our favorites.

We have meatball subs a couple times a month, but on this particular day I really wanted a grilled cheese. Plus the panini press was feeling a little left out. So I just smashed the two together. Meatballs & marinara sauce stuffed inside two slices of bread and provolone cheese. I was a little nervous what my husband would think, but as he finished his first sandwich he said: “This Was A Great Idea”.

YEEESSSS!! Wahoo!
A sandwich we can both enjoy. I get my grilled cheese and he gets his meatball sub.
I’ll mark that up as a WIN!

Save Time: Use A Crock Pot

Another reason I love this recipe is it starts out in the crock pot. I used meatballs that I had previously made and frozen. I put a jar of our favorite marinara sauce and the meatballs (still frozen) into the crock pot. I set the crock pot to low and went about my day. When it was time for dinner I used the sauce and meatballs from the crock pot to assemble the sandwiches and within 10 minutes we had dinner on the table. It’s quickness makes it perfect for a week night meal when we’re busy with after school activities or homework. That is a DOUBLE WIN!

Alternate Ideas:

Add slices of pepperoni to the sandwich for an extra Italian flare.
Use mozzarella cheese in addition to or instead of provolone.
Use same concept but barbecue sauce instead of marinara and cheddar instead of provolone.
