Who doesn’t love a creamy lemony dessert and if it’s made in less than 10 minutes, it sure is a ‘Dream come true’. Summer’s is full of backyard/BBQ’s parties or picnics and I’m always thinking of new desserts to please everyone, especially if I’m hosting a party, then I’m definitely looking at recipes which take the least amount of time to make but leaves you with a mouthwatering result.Lemon Creamcheese bliss ballThat’s exactly when my ‘Lemon Creamcheese Bliss Balls Recipe’ comes to my rescue. I remember the first time they were served at our place, they were all gone in 5 minutes and left everyone raving about the lemony taste and the melt in your mouth texture. More than the adults, these were an instant hit with the kids, as they were easy to munch upon and mild in taste.lemon-bliss-ballsI usually make them a day in advance and off course I make few extra just for us to nibble while watching TV or just hanging out on our patio.   1. In a food processor, add cream cheese, almond meal, lemon juice, sugar and pulse to form an even dough.
  2. Remove from food processor and divide the dough into 24 equal balls using a cookie scooper or spoon.
  3. Roll into round balls.
  4. Roll each ball into the coconut flakes.
  5. Serve fresh or store in fridge upto 2 days.

Notes

* You can use store-bought almond meal or make by pulsing raw almonds at home. You can even replace almond with any other nut meal as per choice.

  • 1/4 Cup Sugar
  • 1/4 Cup Unsweetened Coconut Powder/Flakes
  • 1-2 Drops Yellow Food Color - optional
  • 3 Tbsp Coconut Flakes - for decoration
